Step 2. Lower the heat to medium. Add the onion, garlic and red-pepper flakes to the skillet and cook for 5 minutes, stirring occasionally, until onion is translucent and garlic begins to brown. Add tomatoes, white wine and sugar (if using). Cover the skillet and cook for 5 minutes, until tomatoes begin to burst. Step 3.

Instructions. In a large skillet with cover, heat the olive oil over medium-high heat. Add the tomatoes, salt and pepper and cook, stirring frequently for 3 minutes. Push the tomatoes to the sides of the pans and add the fish fillets. Cook the fish for two minutes (do not flip the fish).

MAKE THE SAUCE: While fish is baking, heat 1/2 tbsp oil on medium heat in a saucepan. Add all other sauce ingredients (except parsley) and cook for about 5-7 minutes just until tomatoes start to break down. Use the back of a large spoon or spatula to smash them a bit if needed.

In an oven-safe dish, place the cherry tomatoes, garlic, salt, pepper, half the lemon zest, half the lemon juice, and Italian seasoning. Pour the olive oil on top, and toss until well combined.

4. Add fish skin side down and the cherry tomatoes. Let fish and tomatoes cook for 2 minutes untouched. 5. Add wine to deglaze the pan scraping the bottom of the pan with a wooden spoon. 6. Flip fish over and cook for 90 more seconds while the tomatoes roast. Use the remaining juices to baste the fish.

Place the skillet with the quinoa over low heat. Bring up to a light simmer and simmer for 10 minutes. Quinoa should absorb most of the liquid. 4. Stir the quinoa and arrange the fish fillets and cherry tomatoes on top of the quinoa. Drizzle with one tablespoon of olive oil and simmer for 10 minutes more with the lid on.

Peel and thinly slice 4 garlic cloves. Add 2 pints grape tomatoes, 2 tablespoons to 1/4 cup drained capers (rinse if salt packed), 3 tablespoons of the olive oil, 2 tablespoons red wine or sherry vinegar, and 1/4 teaspoon of the kosher salt. Stir to combine. Roast until the tomatoes soften and split, about 20 minutes.
